About Me

My name is Jessica Mertens, I am a graduate of the International Culinary Center in New York. I completed the pastry program February 3, 2014. Before the pastry program, I attended the University of Connecticut intent on becoming an accountant. In my free time I cooked, baked, and conceptualized my own recipes. As a part of an independent art studio, The Village Designs, my friends and I were inspired to create our own cookbook. We based the recipes off of books; drawing inspiration from fairytales, current fiction, and classic novels. Upon self publishing the cookbook, I decided pastry was my true muse.

At the International Culinary Center, I became enthralled with the process. I enjoyed tarts, cakes, chocolate, sugar, and bread. I became adept at the concept of creating a showpiece whether it was functional or not. I still love the art of conceptualizing recipes and themes. I think having clear menu items with intent and connection can really enamor the audience.

My goal is to continue creating recipe ideas and release more cookbook editions. In addition to opening my own establishment in the future.
